I’ve been on a health rollercoaster this week. My body has been going through periodic purging sessions after I’ve eaten something it didn’t like. How do I know? I feel my innards gurgling after I eat, and then I get gas and some degree of discomfort until my body purges itself.

Two days into Week 5, I awoke at 2 am with my heart beating really hard, a pulse of 125, and feeling fatigued, like I had run a marathon. When I tested my blood pressure at 5:47 am, it was really low, 98/55 with a pulse of 130.

This week I’ve started week four of the 6-week Phase 2 part of the Plant Paradox eating plan. My biggest challenge is that my husband continues to eat the foods we’ve always eaten, non-organic chicken, pork, and farm-raised shrimp, and sometimes grass-fed beef burgers. The spices he uses smell wonderful!

After reading Dr. Gundry’s book, I’ve learned that not all gluten-free flours are good for the gut because the grains, including brown rice, are processed with the hull where the lectins live. He explains that Asians have always removed the hull and only cooked white rice for the reason that white rice was nicer on the digestive system.
